Sauteed Snow Peas


During the week, I like to keep my side dishes simple and healthy. I try to rotate different veggies so we don’t get bored, but it does get a little difficult at times. With Michael’s intense dislike for broccoli :roll:, I have to constantly be creative. (I think this dislike is due to only having plain boiled broccoli in the past!) These sauteed snow peas are the perfect accompaniment to any meat or seafood dish, especially seared scallops. You’ll be amazed by how much flavor comes with every bite!

Since Michael and I like our food on the spicy side, I always add extra red pepper flakes to this dish. If you don’t like spicy food, you can stick with just one pinch or omit completely. Definitely give this recipe a try when you’re looking for an easy and quick fix during the week. It works well with sugar snap peas too!

Recipe
Yield: 2 servings

INGREDIENTS:
1/2 lb. snow peas, trimmed
1 tsp. extra virgin olive oil
kosher salt
freshly ground black pepper
red pepper flakes (optional)
1/2 lemon, zested and juiced

DIRECTIONS:
1. Heat oil in a saute pan over medium-high heat.
2. Add snow peas, salt, black pepper, and red pepper flakes (optional).
3. Toss for 3 to 5 minutes, until snow peas are crisp tender. Remove from heat.
4. Add lemon zest and juice and toss to combine. Serve immediately.
